ASIAN TOUCH

With the goal of making heritage fare more accessible to the public, young chefs Chong Jun Xiang, Daniel Gan and Martin Tan opened casual restaurant Lemak Boys (under the Les Amis Group) in September 2020. “I hope to keep the legacy of these heritage dishes alive,” explained Chong, whose menu includes the quintessential laksa, nasi lemak, chicken rendang and turmeric fish curry. With a similar aim in mind, Song of India’s former culinary director Manjunath Mural has left his perch at the helm to open Adda, a more casual outfit serving Neo-indian fare. As did another veteran, Milind Sovani, formerly the executive chef of Rang Mahal, who has opened a casual gastro bar concept dubbed the Masalaa Bar; the menu features his signature modern Indian fare (including his take on chicken tikka and tandoori chicken) at pocketfriendly prices. lemakboys.com.sg, masalaabar.com, thespiceadda.com
