Hashida Singapore sets itself apart from the many sushi-yas by focusing on not just the craft of Edomae sushi, but on also providing a fun experience, evident in the hidden messages inside the chopsticks wrap. Helmed by Kenjiro “Hatch” Hashida, the meal starts with a tray of elaborately dressed seasonal produce painstakingly put together, before progressing to the de rigueur slices of supremely fresh sashimi. In between the delicate morsels of sushi, the charcoal grill is put to good use with either Wagyu or fatty seasonal fish before ending with a glorious slab of otoro that is sliced jamon-style with the same flourish as a Japanese swordman.
