From the plethora of new omakase openings, Sushi Ichizuke stands out. Head chef Ryoichi Nakatani's 20 plus years of Edomae sushi expertise is played out in the tasting menus, which are marked by deft techniques, the freshest ingredients from Toyo's Toyosu Fish Market and creative touches. Examples include a firm crunchy Hokkaido prawn sushi brightened by a topper of yellow flying fish roe with umami minerality; and the juicy savoury nodoguro (black throat sea perch) served with sweet binchotan-grilled Chiba corn. His signature Ichizuke Kaisen comes brimming with Hokkaido hairy crab, bafun uni and yellow sword fish roe. Service is attentive yet discreet, and the drinks list includes breezy Dassai sakes as well as Old and New World wines.
