The ever-changing menu is a showcase of classic Basque dishes that are given a modern reworking—roasted Najerano peppers enhanced with a sweet tomato essence and a dollop of Amur caviar; suckling pork belly whose meatiness is offset by the apple served in a variety of ways; and Bomba rice infused with the briny flavours of the sea and studded with sea anemone and sea succulents.
