Chef de cuisine Jordan Keao breathed new life into the restaurant when he joined in mid-2021. Born and brought up in Hawaii, Keao showcases a pared-down menu that reflects his roots with subtle Polynesian accents, while staying true to the ethos of an impressive steakhouse. Expect forceful flavours from dishes that are never under-seasoned, and superbly curated and prepared meats, fish and vegetables—sustainably sourced and of pukka provenance.

The A5 Wagyu from Kagoshima is often on the menu—the striploin in particular is beautifully marbled with a robust meatiness—and the Japanese mackerel with arugula purée has become a crowd favourite in the flap of a fin. The restaurant is beautifully designed with just the right balance of elegance and conviviality—perfect for imbibing the atmosphere and mulling over a wine list that extends to 17 pages. Service is, as would be expected from an establishment within the Raffles Hotel Singapore, nigh on impeccable.
