Flutes Restaurant is a hidden gem nestled in the National Museum of Singapore. Boasting high-ceiling dining rooms and crisp table settings, the space is elegant and reflects the building’s rich history and heritage with an exquisite experience to boot. The restaurant is helmed by executive chef Peter Rollinson, who offers diners a well-thought out, seasonal degustatio­n menu of five or seven courses at dinner. There’s a skillful mix of creativity and precision in preparing the dishes—each plated with a range of vibrant colours and refreshing flavours that balance acidity and umami for guests to indulge in. If you’re lucky and the Spencer Gulf and Skull Island prawns are in season, you might get to savour them in the seven-course meal. The Spencer Gulf prawn is served with avocado salad and a chilled tomato gazpacho; and the Skull Island prawn comes with spaghetti in bolognese sauce topped with salmon caviar.
