FOC Sentosa

-

The beachside restaurant in Sentosa has drawn many patrons for its chill vibes and delicious Mediterranean fare. It’s an ideal location for pre-prandial drinks (there’s a good selection of Spanish wines and cocktails), as well as a hearty dinner of tapas, mains and desserts. You can’t go wrong with the Iberico ham croquetas— balls of goodies that are crispy on the outside and creamy on the inside, thanks to a decadent stuffing of finely mashed potatoes, cheese and ham. Make it an even bigger feast with the likes of charcoal-grilled octopus leg finished with a kiss of smoke, and pan-seared Hokkaido scallops drenched in an earthy mushroom sauce. For mains, order something different such as the Mediterranean squid ink paella. The al dente rice studded with prawns and scallops is infused with squid ink—hence, the deeper umami and seafood flavours. It’s best savoured with the homemade aioli to cut through the richness.
