Tatler Dining Singapore

Ichigo Ichie

-

With a distinctive herringbone pattern along one wall, Ichigo Ichie (“one life, one moment”) restaurant invokes thoughts of seafood, prominent on the omakase menus. The chefowner graciously interacts with diners throughout the meal. Assorted sashimi sets the tone, pristine and colourful. Succulent tiger prawn crowning thin somen adds drama to the sashimi presentation. Short-necked clam dumpling topped with saltwater nori reposes in a broth redolent with contrasting freshwater nori. Not to be missed is the simple dish of rice topped with light-tasting anago (conger eel) and tempura-style manganji (large green pepper). It’s finished with a generous shower of umami-packed tendon sauce. Harmony prevails in the finale of hojicha (light brown, smoky, roasted tea leaves) flavoured ice cream and jelly, with crunchy rice puffs for added texture, and accompanied with a cup of the warming tea. The sake list includes Ichigo Ichie’s private label, with an award-winning sake providing an elegant dimension to a meal.
