Madame Fan is prominent Londonbased restaurateur Alan Yau’s
(of Hakkasan fame) first foray in Singapore and Southeast Asia. Outfitted with a small stage and stage lights, the swanky and seductive art deco-inspired main dining hall used to host Shanghai jazz nights and
DJS during the pre-covid weekends. Focusing on refined Cantonese cuisine with a modern touch and a bar programme, the restaurant draws diners looking for a memorable dining experience. The kitchen is headed by chef Pak Chee Yit serving dishes from drunken chicken soup spiked with a healthy dose of 20-yearold Gu Yue Long Shan rice wine to a superior version of crisp ume wasabi prawn. Best sellers include crispy duck served with pancake wrappers and typical Peking duck condiments, and Cantonese-style wok-fried lobster with ginger and spring onions on a bed of springy wanton noodles.
The wine selection and service are exemplary, with something to please every picky drinker from Burgundy and Bordeaux to baijiu.
