South Korean chef Sun Kim’s culinary identity shines through at Meta Restaurant. His dishes, which meld Eastern and Western flavours, have morphed to proudly take on a contempora­ry Korean angle. Korean ingredient­s and condiments liberally appear on the menu, which includes haute interpreta­tions of classics like gimbap and gyeran jjim (steamed egg). The mains get progressiv­ely heavier and feature richer flavours in the dinner menu. It culminates in the show-stopping signature, Korean BBQ. The dish arrives as a platter that centres around plush slabs of Iwate beef striploin and banchan (side dishes) like white kimchi with an astringent touch, and fragrant and earthy burdock rice.
