Centrally located at the exclusive Four Seasons Hotel, this modern and well-appointed Asian brasserie offers different menus throughout the day—with the Provençal meets Asian inspiration most evident at dinner. The open kitchen with wood-fired grills surrounds part of the lush botanical-inspired dining room. Frenchvietnamese chef Pierre Barusta’s appreciation for fresh produce and Asian ingredients shines in dishes like hamachi tiradito with daikon, jalapeño and citrus-soy, as well as superbly fresh and flavourful snapper bouillabaisse with lobster, scallops and lemongrass. The charcoal-grilled grain-fed MB4 T-bone Fiorentina is exactly medium-rare as requested, and served with two accompanying sides and sauces—you can’t miss the Armagnac peppercorn sauce. Service is prompt and the wine and cocktail list is more than adequate.
