Celebrity chef Alain Ducasse has made a grand comeback in the local F&B scene with the opening of Osteria BBR at Raffles Singapore. The new outfit is helmed by his protégé and chef de cuisine Francesco Soletti, who serves up inspired Italian dishes comprising antipasti, pasta, seafood and more. Taste the beautiful flavours of the sea with the Mazara del Vallo red prawn tartare, featuring creamy buffalo mozzarella, savoury jelly and a dollop of Kristal caviar. Need something heartier? You can’t go wrong with the eliche di gragnano, a toothsome pasta tossed with fresh Maine lobster chunks, eggplants and finished with a squeeze of citrus to enhance the flavours. Like any Ducasse establishm­ent, there’s a fine selection of pours from the Old and New World regions, as well as innovative cocktails to start or end your meal.
