The minimalist decor sets the stage for a memorable dining experience, led by head chef Keiichi Kobayashi. With over 20 years of experience in the kitchen, Kobayashi’s mastery lies in Edo-style sushi where pristine slices of seafood are often cured before placing atop shari (sushi rice), which is lightly laced with vinegar. The seasons, as well as the produce from Toyosu Market in Japan, dictate what will be in Kobayashi’s omakase menus, but expect to feast on the likes of otoro (fatty part of the tuna), chutoro (belly area of the tuna), uni and Spanish mackerel.
