The food at Spago is, at worst, very good, and at best, excellent. Conception and execution of all the dishes are sound and often creative—opening salvos such as the hamachi ‘tiradito’ is a fine example of fancy Nikkei cuisine, while the sweetcorn agnolotti is heaven in a mouthful. The pan-seared red snapper ‘laksa’, however,
(an ever-present since the restaurant opened) is startlingly delicious at first bite but fades into fulsome at last. The grilled Iberico pork chop is superb—beautifully cooked, perfectly seasoned—and the Japanese amela tomato soup and charcoal grilled octopus are highly recommended. Don’t leave without sampling the salted caramel soufflé, as that would be a crime. The service is admirable; the ambience is interesting and open to interpretation, and Spago is most definitely one of the restaurants in Singapore that you have to visit.
