Summer Palace, Regent Singapore’s resident Cantonese restaurant, has retained its one Michelin star status since 2016. It’s no surprise given executive Chinese chef Liu Ching Hai’s penchant for whipping up exquisite Cantonese dishes inspired by his culinary memories, such as learning the intricacies of stir frying some years back. Liu’s expertise is also displayed in the meat selection, among which are the crispy roast pork; crispy skinned honey-glazed barbecue pork; and the amazingly juicy and tender Peking duck. Equally impressive is the expansive wine list, created in partnership with wine lounge Park 90. Options lean heavier on the French side, but there’s a decent selection of pours from other regions like Mosel in Germany, Sonoma in the US, and Margaret River in Australia to satisfy all palates.
