Revolving restaurants tend to be gimmicky and lacking in substance when it comes to the cuisine; so it’s wonderful to report that Tóng Lè makes no compromise whatsoever on the quality of the food it presents. The ambience may be a bit austere— cut glass finery and starched linen tablecloths—but once the meal starts, the focus is on relaxing into some exquisite dishes. The Chinese scrambled egg white (with diced fish, uni and caviar) is highly recommended, as is the crystal prawn—braised in stock and perfectly cooked; it has a fabulous texture and an exceptional subtlety of taste. The slow-cooked pork belly is an absolute triumph of a dish, and the hot and sour crab meat broth could be awarded a ‘best in show’. The menu is vast, so ordering a set meal that works for the duration of your visit is sensible and will prove to be eminently satisfying. Trust the creator. He knows exactly what he’s doing. As do the superefficient wait staff.
