Working hand-in-hand with local, regional and sustainabl­e farmers, Chin’s deliberate culinary approach minimises carbon footprint and reduces food wastage. Protein trimmings are bestowed with a new purpose as rich sauces, and fruit remnants are reborn as luscious purées.

As the sun dips below the horizon, Vue’s spritz bar becomes a picturesqu­e rooftop oasis where cocktails are flanked by twinkling lights from the cityscape below. Here, a mix of charcuteri­e, cheese and freshly shucked oysters are savoured alongside G&TS, aperitivos and digestivos, providing an idyllic hideaway for a predinner escape or a post-meal sesh.
