A name etched in Singapore’s culinary tapestry, Jumbo Seafood is a name that conjures happy memories in the minds of Singaporeans. Dining at Jumbo Signatures, however, is an extraordinary experience that begins at the doorstep of its refined blackand-white exteriors at Marina Bay Sands. Ditch the crab crackers and messy bibs, and indulge instead in a seasonal sevencourse tasting menu that elevates classic Singaporean seafood into refined delicacies that can be savoured easily and without the need for gloves.
The evening commences with a medley of starters, each priming the palate for a bounty of fresh seafood delights. Among the signature dishes served here is the hand-shredded live lobster, chilled and served with fruit salad in a sesame dressing. The slight sweetness and nuttiness of the sesame accentuates the freshness of the lobster and the fruits. Another star in the show is the succulent scallop wrapped in a crunchy ring of yam. A symphony of textures, it harmonises beautifully with drops of sweet sauce drizzled on top.
When it comes to mains, indulge in the fuss-free crab claw, pre-cut and served in your preferred style. Those with a taste for tradition will take great pleasure in the classic chilli crab or fiery black pepper options. But for something even more delicate, opt for the crab steamed with silky egg white and truffle, an unconventional masterpiece best enjoyed in crispy kueh pie tee shells. Warm and comforting are the right adjectives to describe the baby cabbage, perfumed with garlic and served in a golden stew. Premium ingredients continue to take centre stage with the three-head sliced abalone featuring in the Inaniwa udon that comes swimming in a deeply flavourful dashi broth.
Adding a further touch of indulgence is the optional wine pairing programme. The Cloudy Bay sauvignon blanc is perfectly light and crisp, an ideal accompaniment to the starter courses, while the Kalleske “Elenore” Single Vineyard sémillon, a wine boasting profiles of grapefruit and pear with buttery notes, pairs well with all crab and lobster mains.
