Peppermint also hosts more than 10 food promotions annually, featuring cuisines such as Taiwanese, Korean, Peranakan, Thai, Singaporea­n and more.

Some perennial à la carte favourites include the signature Singapore lobster laksa, which comes with succulent lobster meat and a broth that is redolent of dried shrimp and laksa leaves; smoky char-grilled black Angus beef sliders; supreme chicken with cilantro lime; and the sustainabl­e barramundi glazed with honey soy on cauliflowe­r rice.

For the freshest catch of the day, the seafood table promises an oceanic treasure trove starring king crab legs, prawns, mussels and other shellfish on beds of ice. Armed with a renewed focus on conscious dining, Peppermint’s menus now include plant-based options and the use of sustainabl­y and locally sourced ingredient­s. And much of what Peppermint offers is taken from the hotel’s own Urban Farm, where over 60 varieties of edible herbs, flowers, fruits and vegetables flourish. These fresh harvests are often featured as garnishes, aromatics or used in salads and even tea infusions.
