Good Taste Try this cake recipe adapted from a cookbook published by V-zug Singapore

The circuit-breaker period has inspired many of us to get our hands covered in dough, whipping up pastries and other baked treats to keep busy. If you’ve had enough of baking banana breads and brownies, it’s time to give this citrus olive oil cake recipe a try. V-dining pastry chef Joe Leong (pictured right) says that the recipe is easy to prepare even for novice bakers. “Basically, you just have to whisk everything together, mix well, fill it, and bake it,” he quips. Leong is one of 100 local chefs who have contribute­d to a cookbook which is available only to owners of V-zug appliances.

Its use of yogurt also makes this cake a healthier option, compared to other richer, sugar-heavy treats. “The inspiratio­n for this dish is my grandmothe­r,” says Leong, on the heartfelt inf luence behind this recipe. “As she is diabetic, I wanted to prepare a healthy and satisfying dessert for her; this recipe requires less sugar compared to regular desserts. Yogurt also adds a slight acidity to boost the f lavour of the cake.”

The use of mandarin zest adds an Asian touch while lending a rich sweetness that enhances the savoury notes of the olive oil. Alternativ­ely, you can use lemon zest for a more tangy take on this recipe, or replace the use of yogurt with the same amount of coconut cream and the juice from half a lemon.
