It’s always choices galore each time the Mid-autumn Festival rolls around, as food purveyors vie to offer the next most novel spin on the mooncake. For gourmands who seek out new flavours to delight their taste buds and those who simply crave a wellmade traditiona­l mooncake, the line-up from Crystal Jade Culinary Concepts has all the bases covered. Sweet delights come in the form of the assorted mini snow skin selection, available in four delectable fillings in a box of four or eight. Citrusy yuzu with lemon is zesty and fragrant, while fresh strawberry with cranberry contains a creamy berry blend. With just a touch of savoury to balance the sweet, the rich salted caramel snow skin and natural sea salt with dark chocolate (made with 70 per cent dark chocolate by renowned Italian chocolatie­r Icam) round off the selection. Under a layer of delicate white snow skin, a white chocolate truffle filling is imbued with fruity notes characteri­stic of the Impérial vintage. And traditiona­lists aren’t left out. Crystal Jade’s baked mooncakes, skilfully made with a thin, moist pastry skin, have garnered a loyal following of fans over the years. Inside, the premium natural white lotus paste is made with less sugar. Variants include single and double yolks, a melon seed version, as well as the popular mixed nuts and ham, which is chockfull of crunch from olive and sesame, almonds and more, as well as flavourful Jinhua dry-cured ham.
