Dom Pérignon held a coming-of-age party in March for its Second Plénitude 1998 Vintage, known affectiona­tely as P2, in the avant-garde venue that is the high-security Le Freeport art storage facility. After all, after 16 years of ageing, this 2014 release was one worth celebratin­g in style. Ian Mclernon, director and general manager of Moët Hennessy Diageo Singapore, explained how the 1998 vintage was first unveiled in 2005 after its “first plenitude” of ageing seven to eight years. As the 150 guests discovered, the second plenitude—typically another 12 to 15 years’ ageing—has brought out rich, toasty notes that complement the aromatic vintage’s distinctiv­e creamy chewiness, which found perfect pairings from the menu of caviar, cheeses, iberico ham and oysters.
