TOAST OF THE TOWN
The gastronomic experience at gastro wine bar Ma Cuisine starts with your wine selection
NEW CHAPTER
Ma Cuisine shares its name with the original restaurant in France’s Beaune region in Burgundy, which is owned and run by chef and owner Mathieu Escoffier’s family. But Escoffier (pictured above right) and his business partner Anthony Charmetant (left) emphasise that it is not a carbon copy. “It’s a new concept based on its legacy (as a wine destination),” they share, adding that “it’s less traditional—we want to make it a fun place to discover and rediscover wines in an engaging and unpretentious place”.
The two met at a wine bar over a bottle of Clos de Vougeot, Domaine Hudelot-noellat 2013. With a shared passion for food and wine, they admit that it was only natural for them to work together. Escoffier, who has worked at various French establishments such as Joël Robuchon and Daniel Boulud, heads the kitchen, while Charmetant, who has worked at Paul Jaboulet Aîné, serves as the sommelier.
