Crystal Jade’s lavish culinary treats offer fresh interpretations of classic Chinese New Year dishes
he best-loved Chinese New Year dishes are sensorial journeys: abundant in colour, full of flavour and texture, while brimming with celebratory meanings. This year, chef Martin Foo, group executive chef of Crystal Jade Culinary Concepts Holding, expertly serves up all of the above and then some— with creative takes on iconic dishes designed to bring joy and conviviality to the table. Most Chinese New Year feasts start with the ubiquitous yusheng. Chef Foo’s version, Auspicious Hamachi Yusheng, is a harmoniously balanced interpretation comprising briny, sweet and savoury flavours. The dish is topped with hamachi, salmon roe and umibodo or sea grapes on a base of crunchy julienned carrots and turnips. Dressed with a delicious concoction of passionfruit, roselle and plum sauce, the salad is sprinkled with crunchy pork floss—a clever and delectable nod to the Year of the Pig. Another highlight of Crystal Jade’s festive menu is the Eternal Bliss Platter, which is only available for pre-ordered takeaways.
