Singapore may be a culinary capital, but you would be hard-pressed to find an establishm­ent as memorable as Long Beach Seafood Restaurant

Founded in 1946 when it was still located at the old Bedok Rest House, Long Beach Seafood Restaurant is undoubtedl­y a venerable name in the local culinary scene. Now with five outlets in Singapore, the restaurant is still dedicated to offering the finest, freshest seafood—no wonder its masterful dishes are the stuff of many a mouth-watering feast.

Fresh premium seafood is air-flown and made available for selection from the glass tanks that are a fixture in all its outlets. The dishes are cooked a la minute and generously portioned and satisfying for even the most discerning gourmand. Besides boasting the original, world-famous black pepper crab, which was created in 1982, Long Beach’s menu also features dishes that showcase the culinary team’s expertise in creating seafood dishes.

Take the air-flown live South Australian lobster, for instance. It is wild-caught and prized for its sweet and delicate flesh, thanks to the nutrient-rich waters of the Southern Ocean. Enjoy it sashimi style or in a steamboat of fragrant, superior broth. The Canadian geoduck sashimi (pictured) is another dish to try. The meat of this saltwater mollusc is somewhere between a chewy clam and a tender abalone but with a crunchy texture. It is best enjoyed blanched in a savoury stock.

Also, order the Li Shan claypot live marble goby. The fish arrives at the table simmering in a thick, milky, nourishing stock, which has been stewed for eight hours using chicken and fish bones, herbs and other ingredient­s for its rich umami. Complete the meal with other offerings such as deep-fried live grouper with mango in Thai style; Scottish razor clams with minced garlic and vermicelli; and Alaskan king crab in white pepper sauce. These sumptuous seafood dishes are reasons enough for guests to make reservatio­ns for a return visit soon after every satisfied meal.
