For The Compound Collective’s second bar concept Revival, creative director Celia Schoonraad shares that she and her team wanted to “create a little more than a cocktail menu with words on a page”. So they took a leaf from art movements such as neoclassicism, romanticism and impressionism to craft the menu. Take, for instance, a painting by Claude Monet, a key figure in the 19th‑century impressionist movement. Words such as “floral”, “delicate” and “soft” come to mind, says Schoonraad, who explains that “this is already a flavour profile”—one you can taste in the bar’s Pathway in Monet’s Garden in Giverny cocktail. Two types of Hendrick’s Gin—rose petal and cucumber—are used for its botanical components, and the blend is mixed with jasmine syrup for sweetness, lemon for acidity and egg white for a silky mouthfeel. “Overall, it’s a delicate, floral experience—much like [the art of] Monet,” says Schoonraad.
