FOOD The finest cuts

Bedrock Bar & Grill

Bedrock Bar & Grill introduces the second edition of its 2021 World Meat Series, featuring premium Devesa Argentina Beef. Now in its fifth year, the series showcases some of the finest cuts of meats from around the world. From April 1 to June 30, diners can look forward to an exquisite selection of dishes that encapsulates the unique taste and tenderness of Devesa Argentina Beef, prized for its natural marbling. Having established its roots at the heart of the Argentinean Pampas in 1840 — Argentina’s most fertile area — the temperate climate and nutritious grass helps develop the meat’s flavour.

To experience a taste of Devesa Argentina Beef, diners can take their pick from three cuts with accompaniments that capture the essence of traditional Argentinian cuisine.

The Braised Beef Oyster Blade ($42) features a hearty cut with more bite, slow- braised till fork- tender in a base of red wine, rosemary, bay leaf, onion, garlic, and carrots and served with parmesan rosemary polenta and apple- wood grilled sweet vine tomatoes.

Meanwhile, the rich and buttery Woodfire Grilled Ribeye Steak ($ 68) is grain- fed for 100 days, delivering mouth- watering juiciness with every bite. It is complemented perfectly by chimichurri sauce, made with a blend of parsley, thyme, chervil, white wine vinegar and olive oil — adding a burst of freshness and a slight hint of tanginess to the ribeye.

The Lomito Sandwich ($ 36) features the restaurant’s house- made potato bread along with a succulent 150g Striploin steak. An elevated version of the popular Argentinian street food, this meaty sandwich is packed with prosciutto ham, romaine lettuce, Gruyère cheese, eggs, mayonnaise and tomato jam.
