Savour the aromatic floral flavours of Perrier-Jouët champagnes in a lavish five-course dinner at table65

The first entrée (pictured right) is a light salad that features a couscous of long-grain basmati rice from the Himalayas, combined with spring vegetables, Pierre Robert cheese and grated roasted pistachio for extra crunch. The clever layering of textures and flavours is taken up a notch with the pairing of Perrier-Jouët Blanc de Blancs. This Chardonnay-based champagne is lively and luminous and lingers into a smooth, mellow finish — a bubbly very popular with champagne novices.

Our favourite bubbly from the Perrier-Jouët collection is definitely the bestsellin­g Belle Epoque, known for its artful bottle adorned with the graceful spray of Japanese white anemones by Art Nouveau master Emile Gallé in 1902. This 2012 blend is a delight on the nose as it is on the palate with mouth watering aromas of pear, grapefruit and green pepper. This bubbly really complement­s table65’s Mozambique langoustin­e poached in duck fat, served with creamy Albufera-style dashi, topped with grated coffee, lemon and smoked bonito flakes (pictured right).

We also try the Belle Epoque Rosé, a rich, intense and voluptuous bubbly that unleashes fragrant aromas of white flowers and wild strawberri­es. Its complex gourmet flavours are ideal for less intense seafood like the Dover sole, a confit roasted garlic oil paired with a dash of mushroom, bacon duxelle and oxidised wine for deeper, layered flavours.

The dinner finishes with an artful apple dessert inspired by the classic French tarte tartin (pictured right). It features a core of Granny Smith apple sherbet with piths made out of chocolate, encased in a sugar glass dome. The precision and delicate work in this impeccable work of art is probably why table65’s celebrity chefs Richard van Oostenbrug­ge and Thomas Groot have just recently been accorded two Michelin stars for their critically-acclaimed Restaurant 212 in Amsterdam.

The moistness of this apple dessert complement­s the drier nuances of Perrier-Jouët Belle Epoque Blanc de Blancs 2006, a vintage cuvee crafted from 100% Chardonnay grapes. It is a joy to inhale this champagne — pure intense aromas of white flowers complement­ed by subtle overtones

Perrier-Jouët x table65 Art of the Wine Dinner Series is a new epicurean series that features a lavish five-course dinner menu boasting signature modern-European dishes crafted to complement the brand’s collection of beloved champagnes. This will also be the first time diners will get to savour Perrier-Jouët Blanc de Blancs — following its official launch in Singa

The next dish (pictured right) is the divine Os à moelle — veal tartare encased in a ‘bone’ made out of the concentrat­ed stock of smoke herring. The salty-savoury nuances are perfectly balanced by the sweetness of Perrier-Jouët Blason Rosé — a pretty-in-pink cuvée made with Chardonnay grapes and Pinot Noir. Lusciously full and round on the palate, this rosé unleashes intense aromas of ripe red currants and black fruit — strawberry, raspberry and blackberry — complement­ed by a hint of pomegranat­e. of candied fruit and freshly baked bread. You can taste the wisdom in its richer, full-bodied flavours that leave a lingering silken finish on the palate.

The gastronomi­cal journey begins with a delightful trio of amuse bouches paired with Grand Brut, epitomises the heritage of the Perrier-Jouët collection. The refined and balanced cuvée blends the floral nuances of Chardonnay with two red grape varieties, Pinot Noir and Pinot Meunier. It is crisp and light floral aromas rounded out by fresh fruit and hints of buttery brioche and vanilla go perfectly well with our pre-dinner appetisers which included a refreshing lobster tartare and tomato churro.
