■ Black Tomato Gin is a complex and robust spirit, with rich dark fruits balanced by the tang of the tomato, spice, and a peppery kick of juniper. Atlas head bartender Jesse Vida recommends it in a Red Snapper.

■ Rutte Celery Gin was inspired by a Dutch distillery recipe from the 1800s. Its Old Simon genever contains celery. Vida says this savoury gin makes a perfect gimlet or Tom Collins.

■ The Four Pillars Olive Leaf Gin combines Australian olive oil and olive leaf tea with rosemary, bay leaf, macadamia nuts and lemon myrtle. According to Vida, it makes excellent martinis.
