Nutty Choc Chip Cookie

Makes 25 to 35 EASY

115g but­ter

50g sugar

80g dark brown sugar

1 egg

½ tsp vanilla ex­tract

150g flour

½ tsp bak­ing soda

½ tsp salt

150g choco­late chips 60g wal­nuts, chopped

1. Pre­heat the oven to 180ºC and grease 2 bak­ing sheets (or line with bak­ing pa­per).

2. Us­ing an elec­tric mixer, cream the but­ter and the two sug­ars un­til light and fluffy.

3. Beat in the egg and vanilla ex­tract.

4. Sift the flour, bak­ing soda and salt. Stir into the mix­ture to com­bine.

5. Add the choco­late chips and wal­nuts. Mix well.

6. Place gen­er­ous tea­spoon­fuls of the dough on the bak­ing sheet, about 4cm apart. Bake for 10 to 13 mins, un­til golden. Trans­fer to a wire rack to cool slightly be­fore tuck­ing in. These are best en­joyed straight out of the oven with a glass of cold milk.

This cookie recipe is ver­sa­tile, fuss-free and above all, easy enough for lit­tle hands to mea­sure out, stir in and spoon out. Adult su­per­vi­sion is re­quired at some steps, but we have kept it to a min­i­mal!
