Independen­ce Day in Is­rael means it’s time to man­gal. From parks to back­yards and bal­conies, the man­gal is fired up and moun­tains of meat take cen­trestage. All sorts of ke­babs and sausages fea­ture, as well as chicken wings and chicken hearts, even asado or beef ribs, pita bread and plenty of Mid­dle East­ern sal­ads, like tab­bouleh, hum­mus, and a typ­i­cal Is­raeli tomato and cu­cum­ber salad.
