Chef-owner of one-Miche­lin-starred Per­anakan restau­rant Can­dlenut, Mal­colm Lee grad­u­ated from At-Sun­rice Glob­alChef Academy un­der the first Miele Guide culi­nary schol­ar­ship. With his mother and grand­mother as his in­spi­ra­tion, Mal­colm hopes to keep au­then­tic Per­anakan cui­sine alive, al­beit with some in­no­va­tive spins. Some of his sig­na­ture creations in­clude buah keluak ice cream and chicken buah keluak.
