Over the last 47 years, Rang Ma­hal has carved its name amongst Sin­ga­pore's best In­dian restau­rants. Hid­den away on the third floor of The Pan Pa­cific Sin­ga­pore, the restau­rant mar­ries In­dian grandeur with Western pol­ish to cre­ate a beau­ti­ful, lofty-ceilinged din­ing room that at­tracts fam­i­lies, in­ter­na­tional dig­ni­taries and Bollywood celebri­ties alike.

The best way to en­joy a meal here is at its lunch buf­fet, which fea­tures many sig­na­ture dishes in­clud­ing tan­doori tiger prawns and chicken tikka, to tomato ras­malai and av­o­cado ke­babs. From the a la carte menu, be sure to or­der the tan­doori fon­due, which fea­tures an as­sort­ment of tan­door-grilled chicken ke­babs and gar­lic naan with a rich, mor­eish cheese tomato makhni dip­pig sauce. Of course, one would also be re­miss to pass on the fan­tas­tic freshly made In­dian breads like do­sai and naan.

Luck­ily for us, Rang Ma­hal's own­ers make it a point to keep their dishes lighter, swap­ping cream and ghee for health­ier nut and co­conut oils. This ensures that din­ers can en­joy the myraid dishes on offer with­out feel­ing un­com­fort­ably full.

Desserts, mean­while, tend to come with a side of drama— think trol­leys, smoke and flambes. But look past all that and you’ll find a lovely ren­di­tion of gu­lab ja­mun or pil­lowy soft dough balls soaked in syrup.
