Sip­ping wines and nib­bling canapes from the top of Ma­rina Bay Sands would or­di­nar­ily sound like a splurgy night out, ex­cept Club55 bucks that stereo­type. Ev­ery evening at 8pm, the 55th storey lounge space trans­forms into a stage for Flights of Fancy, its lat­est bar pro­gramme cen­tred on—what else?—tast­ing flights.

To court favour among va­ri­ety hunters and drink­ing en­thu­si­asts, flights are pegged around the $20 mark for three sam­ples, and sup­ple­mented with an in­for­ma­tive tast­ing sheet. Vi­nos dom­i­nate; five out of seven tast­ing flights are ded­i­cated to grapey elixirs (from $21)—whites, bub­bly, old world reds, new world reds, and dessert pours. There’s also a sake flight ($22) and a beer flight ($18) for nonoenophiles. Tee­to­tallers and des­ig­nated driv­ers are not left out of the pic­ture ei­ther, thanks to a mock­tail flight ($15) that leans on re­fresh­ing, fruit-for­ward spritzers.

Bet­ter yet, stretch for the Flight & Pe­tit Plats op­tion (from $44) to pair your li­ba­tions with a trio of gen­er­ously sized canapes, such as a soy-glazed rib­eye skewer to com­ple­ment a weighty Mer­lot. Ex­ec­u­tive chef Brian Cleere is not in the busi­ness of teeny tiny bites, which makes this quite pos­si­bly the cheap­est three-course wine-pair­ing din­ner in town—and with a glo­ri­ous view of the Ma­rina Bay to boot.
