Starters like tender char-grilled octopus with XO sauce will delight seafood lovers, and the chicken rillettes are testament to his charcuterie skills. For mains, try Boschendal beef short rib with bone marrow and beetroot; while eryngii mushrooms with polenta, parmesan custard and baby leeks is rich in umami.
