Impeccably beautiful bite-size tandoori and langoustin­e, the oyster and saffron cauliflowe­r and the vichyssois­e and caviar make way for tomato consomme with basil, chive, rosemary and verbena, followed by simple dish of Mauritian seabass with leek ash, watercress and pommes boulangere­s. Gregory is fearless – he’s not afraid to put these risky, clever ideas on the menu, and they always work.
