Impeccably beautiful bite-size tandoori and langoustine, the oyster and saffron cauliflower and the vichyssoise and caviar make way for tomato consomme with basil, chive, rosemary and verbena, followed by simple dish of Mauritian seabass with leek ash, watercress and pommes boulangeres. Gregory is fearless – he’s not afraid to put these risky, clever ideas on the menu, and they always work.
