Prep time: 15 min­utes Cook­ing time: 30 min­utes Serves: 2–3

3 cups pump­kin, chopped

2 ta­ble­spoons curry pow­der

2 ta­ble­spoons (30ml) oil

1 onion, chopped

1 ta­ble­spoon ground co­rian­der

1 ta­ble­spoon ground cumin

2 ta­ble­spoons tomato paste

½ cup (125ml) veg­etable stock

Salt and pep­per

2 cups goat's cheese, sliced

Fresh thyme, for serv­ing

Naan bread, for serv­ing

1. Pre­heat the oven to 200˚C.

2. Heat oil, and fry onion un­til soft.

3. Add pump­kin, curry pow­der, co­rian­der and cumin. Cook for 4–5 min­utes.

4. Add tomato paste and veg­etable stock. Sea­son with salt and pep­per. Cover with a lid and cook un­til soft.

5. Trans­fer into oven dish, and crum­ble goat's cheese on top. Grill for 8–10 min­utes or un­til golden.

6. Serve with thyme and naan bread.
