Prep time: 10 min­utes Serves: 4–5

3 peas, 1 flo­rets, cups head thawed frozen steamed broc­coli

Hand­ful baby spinach

Hand­ful as­para­gus, steamed

Co­rian­der, for serv­ing


½ cup (125ml) olive oil

½ cup (125ml) white wine vine­gar

Hand­ful fresh pars­ley, finely chopped

1 tea­spoon sugar

Salt and pep­per 1. In a large salad bowl, mix peas, broc­coli, spinach and as­para­gus.

2. In a jug, whisk dress­ing in­gre­di­ents. Driz­zle over salad and mix well.

3. Serve with co­rian­der.
