Serves: 4–5 2 tablespoons
1 red onion, chopped
2 garlic cloves, crushed
1 red chilli, deseeded and chopped
1 tablespoon curry paste
2 medium courgettes, thinly sliced
1 red pepper, chopped
1 yellow pepper, chopped
2 tablespoons tomato paste
1 tablespoon flaxseed powder
2 cups (500ml) almond milk
Salt and pepper
1. Preheat the oven to 200˚C. 2. In a pan, fry onion and garlic until soft.
3. Add curry paste, chilli, vegetables and tomato paste.
4. In a separate bowl, mix flaxseed powder and water to form paste. Add almond milk and mix well. Season with salt and pepper.
5. Pour over vegetables.
Bake for 25–30 minutes or until set.
6. Serve immediately.
