Bona - - Meals In Minutes -

Prep time: 15 min­utes Cook­ing time: 40 min­utes

Serves: 4–5 2 ta­ble­spoons

(30ml) oil

1 red onion, chopped

2 gar­lic cloves, crushed

1 red chilli, de­seeded and chopped

1 ta­ble­spoon curry paste

2 medium cour­gettes, thinly sliced

1 red pep­per, chopped

1 yel­low pep­per, chopped

2 ta­ble­spoons tomato paste

1 ta­ble­spoon flaxseed pow­der

3 ta­ble­spoons

(45ml) wa­ter

2 cups (500ml) al­mond milk

Salt and pep­per

1. Pre­heat the oven to 200˚C. 2. In a pan, fry onion and gar­lic un­til soft.

3. Add curry paste, chilli, veg­eta­bles and tomato paste.

4. In a sep­a­rate bowl, mix flaxseed pow­der and wa­ter to form paste. Add al­mond milk and mix well. Sea­son with salt and pep­per.

5. Pour over veg­eta­bles.

Bake for 25–30 min­utes or un­til set.

6. Serve im­me­di­ately.
