CO­CONUT RICE PUD­DING

Serves: 3

1 cup sticky rice

2 cups (500ml)

co­conut milk

½ cup white sugar

1 tea­spoon ground

cin­na­mon

Pinch ground nut­meg

1 cup co­conut cream

2 ta­ble­spoons but­ter

1 ta­ble­spoon

(15ml) brandy

Berry coulis, for serv­ing

Blue­ber­ries, for serv­ing

Red herbs, for serv­ing 1. In a saucepan mix rice, co­conut milk, sugar, cin­na­mon and nut­meg. Boil for 4–5 min­utes. Re­duce heat and cover with a lid. Cook for 25–30 min­utes or un­til soft.

2. Add co­conut cream, but­ter and brandy. 3. Serve im­medaitely with coulis, blu­ber­ries and red herbs.
