LEMON VIC­TO­RIA SPONGE

The Vic­to­ria sponge, also known as the Vic­to­ria sand­wich or Vic­to­rian cake, was named af­ter Queen Vic­to­ria. She was known to en­joy a slice of the sponge cake with her af­ter­noon tea. Prep time: 20 min­utes Cook­ing time: 30 min­utes Serves: 5–6

1 cup cake flour

1 tea­spoon (5ml) lemon essence

2 ta­ble­spoons lemon zest

1 cup but­ter, soft­ened

5 large eggs

3 ta­ble­spoons (45ml) cream

+ ex­tra for serv­ing 1. Pre­heat the oven to 180˚C.

2. Whisk but­ter un­til smooth.

Add eggs, lemon essence, zest and cream. Mix well.

3. Add cake flour, bak­ing pow­der and sugar. Mix well, and spoon into 2 lightly greased cake tins. Bake for 25–30 min­utes or un­til cooked through. Set aside to cool. 4. Spread cream and jam over 1 sponge cake. Top with the se­cond sponge. Dust with ic­ing sugar, and serve with berries.
