Port and star anise quince pud­ding

1 bot­tle (375 ml) pink port 70 g su­gar 6 whole star anise 2 whole cin­na­mon sticks 3 large quinces, peeled and cut in quar­ters

Warm the port and all the other in­gre­di­ents to­gether in a medium pot. Add the quince pieces and sim­mer slowly for about two hours, turn­ing of­ten for even cook­ing. It may be nec­es­sary to keep the pot cov­ered at the be­gin­ning, and you may have to add some wa­ter at a later stage.
