COLA-BRAISED BEEF SHORT RIBS
BEEF SHORT RIBS ARE GREAT FOR LONG, SLOW COOKING. THE COLA IMPARTS SWEET STICKINESS AND HELPS BREAK DOWN ALL THE TOUGH FIBRES, LEAVING YOU WITH FALL-OFF-
YOU WILL NEED:
750ml (¾ cup) cola
A handful of fresh ginger, sliced 1 whole bulb garlic, halved
1 red chilli, halved
60ml (4T) brown sugar
30ml (2T) Dijon mustard
125ml (½ cup) tomato sauce 60ml (4T) soy sauce
60ml (4T) Worcestershire sauce 2kg beef short ribs
Salt and pepper
1. Pre-heat the oven to 160°C.
2. Place the cola, ginger, garlic, chilli, sugar, mustard, tomato sauce, soy sauce and Worcestershire sauce in a roasting dish and whisk until the sugar has dissolved.
3. Add the ribs, season to taste and cover with aluminium foil. Roast for 3 hours.
4. Remove the foil and return to the oven for a further 30 minutes.
