Beef stew

SERVES 4-6 PREPA­RA­TION: 10 MIN COOK­ING: 2 HR

1kg beef stew­ing meat salt and pep­per

15ml (1T) oil

2 onions, chopped

3 car­rots, chopped

4 gar­lic cloves, minced

15ml (1T) medium curry pow­der 30ml (2T) tomato paste

1 bay leaf

4 sprigs fresh thyme 1L (4c) beef stock 4 pota­toes, cubed

30ml (2T) Worces­ter­shire

1 Sea­son the beef with salt and pep­per. Heat the oil in a pot over medium heat, then brown the meat in batches. Add the onions, car­rots, gar­lic and curry pow­der. Cook, while stir­ring, un­til the onions are soft and fra­grant.

2 Add the tomato paste, bay leaf, thyme and stock. Re­duce the heat and sim­mer for 1½ hours. 3 Add the pota­toes and Worces­ter­shire sauce. Cook for 30 min­utes or un­til the pota­toes are ten­der.
