1kg beef stewing meat salt and pepper
15ml (1T) oil
2 onions, chopped
3 carrots, chopped
4 garlic cloves, minced
15ml (1T) medium curry powder 30ml (2T) tomato paste
1 bay leaf
4 sprigs fresh thyme 1L (4c) beef stock 4 potatoes, cubed
30ml (2T) Worcestershire
1 Season the beef with salt and pepper. Heat the oil in a pot over medium heat, then brown the meat in batches. Add the onions, carrots, garlic and curry powder. Cook, while stirring, until the onions are soft and fragrant.
2 Add the tomato paste, bay leaf, thyme and stock. Reduce the heat and simmer for 1½ hours. 3 Add the potatoes and Worcestershire sauce. Cook for 30 minutes or until the potatoes are tender.
