Biltong samp and beans
SERVES 6 PREPARATION: 10 MIN COOKING: 2 HR 40 MIN
2L (8c) water
500g samp-and-bean mix,
soaked overnight
1 onion, finely chopped 2 carrots, chopped
2 potatoes, chopped
1 can (400g) chopped tomatoes 1 can (400g) mushroom soup salt and pepper
100g biltong powder
1 Put the water in a large pot over medium heat. Add the samp-and-bean mix and bring to the boil. Simmer for 2 hours until soft.
2 Add the onion, carrots, potatoes and tomatoes. Simmer for 30 minutes or until soft. 3 Stir in the mushroom soup and simmer for another 10 minutes. Remove the pot from the heat and season with salt and pepper.
4 Fold in the biltong powder and leave to stand for 5 minutes before serving.
