Spiced whole chicken

SERVES 6 PREPARATIO­N: 5 MIN COOKING: 1 HR 15 MIN

1kg chicken

30ml (2T) oil

80ml (¹∕₃c) dark brown sugar 60ml (¼c) paprika

45ml (3T) chilli powder

10ml (2t) garlic powder

5ml (1t) cumin salt and pepper

Preheat the oven to 180°C.

1 Brush the chicken with the oil. Mix the sugar and spices in a small bowl and rub on the chicken.

2 Transfer to a roasting pan and cook for 75 minutes or until done (see tip).

3 Cut the chicken into pieces and serve with salads of your choice.
