Pea and ham soup

SERVES 4 PREPA­RA­TION: 10 MIN COOK­ING: 25 MIN

45ml (3T) but­ter

100g deli ham, cubed

1 onion, chopped

2 pota­toes, peeled and cubed 1L (4c) chicken stock

500g frozen peas salt and pep­per fresh rye bread, to serve

1 Heat the but­ter and fry the cubed ham in a pan for 1 minute. Re­move and set aside. Fry the onion, add the pota­toes and stir-fry briefly.

2 Pour in the stock and sim­mer un­til the pota­toes are done.

3 Add the frozen peas and sim­mer for 5 more min­utes. Purée un­til smooth with a stick blen­der or in a food pro­ces­sor.

4 Sea­son with salt and pep­per. Spoon the fried ham over the soup and serve with rye bread.
