Peanut butter fudge
MAKES 28 PREPARATION: 10 MIN COOKING: 4 MIN
625ml (2½c) dark brown sugar
125ml (½c) milk
250g crunchy peanut butter 5ml (1t) vanilla essence 375ml (1½c) icing sugar
1 Melt the butter in a saucepan over medium heat. Stir in the sugar and milk and keep stirring (see tip) until the sugar has dissolved then slowly bring to the boil without stirring.
2 Remove from the heat and stir in the peanut butter and vanilla essence.
3 Put the icing sugar in a large bowl and pour the hot peanut butter mixture on top. Beat the mixture with a wooden spoon until smooth.
4 Pour into a 20 x 20cm square baking sheet and spread evenly if necessary. Set aside to cool completely.
5 Cut the fudge into squares with a sharp knife and store in an airtight container.
