Amasi fritters

500ml (2c) cas­tor sugar 10ml (2t) cin­na­mon

500ml (2c) flour

10ml (2t) bak­ing pow­der 5ml (1t) bi­car­bon­ate of soda 2,5ml (½t) nut­meg pinch of salt

250ml (1c) amasi

2 eggs, lightly beaten oil for deep-fry­ing cin­na­mon sugar

1 Place 300ml cas­tor sugar and half of the cin­na­mon in a medium bowl. Toss well to com­bine. Set aside.

2 In a large mix­ing bowl, sift to­gether the flour, bak­ing pow­der, bi­car­bon­ate of soda, nut­meg, salt and the re­main­ing cin­na­mon. Stir the re­main­ing cas­tor sugar through.

3 Make a well in the cen­tre of the mix­ture and add amasi and eggs. Stir un­til well com­bined.

4 Heat the oil in a pot over medium heat and care­fully drop ta­ble­spoons of the mix­ture into the oil, turn­ing oc­ca­sion­ally un­til golden brown and cooked through.

5 Trans­fer the fritters with a slot­ted spoon to a plate lined with a pa­per towel.

6 Roll in cin­na­mon sugar to coat and serve.
