Paprika chicken with seared mealies
SERVES 4 PREPARATION: 15 MIN COOKING: 1 HR
4-6 chicken pieces salt and freshly ground black pepper
20ml (4t) smoked paprika 15ml (1T) olive oil
4 sweet corn on the cob salt
2 red chillies, finely chopped 10g fresh coriander, chopped
60ml (¼c) sour cream
15ml (1T) lime or lemon juice salt and freshly ground black pepper
Preheat the oven to 200°C. Put a wire rack on a baking sheet and grease with non-stick spray. 1 CHICKEN Season the chicken with salt, pepper and the paprika. Brush with the oil and arrange on the wire rack. Roast for 1 hour or until done and crisp. 2 MEALIES Boil the mealies for 10 minutes or until nearly done. Sear on a heated griddle pan or over hot coals. Season with salt and scatter the chillies and coriander on top.
3 SAUCE Mix the ingredients. Drizzle the sauce over the mealies and serve with the chicken.
